It's Easter soon, so I am thinking of doing this, when I finally get my baking equipment together! It's also a very easy recipe.

Easter cupcakes:

Ingredients

* 325g unsalted butter, softened
* 1 cup (220g) caster sugar
* 1 1/2 cups (225g) self-raising flour, sifted
* 3 eggs
* 1 tsp vanilla extract
* 1/2 cup (125ml) milk
* 3 cups (450g) icing sugar, sifted
* Food colouring of your choice
* 12 coloured chocolate Easter eggs, to garnish


Method

1.

Preheat the oven to 190°C. Line a 12-hole, 1/3-cup (80ml) muffin pan with paper cases.
2.

Place 225g butter in a food processor with the caster sugar, flour, eggs, vanilla extract and 1/4 cup (60ml) milk. Process until the mixture is smooth, then divide among the muffin cases. Place in the oven and bake for 15-20 minutes until risen and golden.
3.

Meanwhile, to make the icing, place the icing sugar, remaining 100g of butter and remaining 1/4 cup milk in the bowl of an electric mixer. Beat on medium-high speed for about 5 minutes or until the mixture is light and fluffy. Add a few drops of food colouring of your choice and beat to combine.
4.

Remove the cupcakes from the oven, allow to cool slightly, then transfer to a wire rack to cool completely. When cakes are cool, scoop the icing into a piping bag with a star nozzle, then use to ice cakes. Garnish each one with an Easter egg, then serve.

I'm not very much into baking. But I'll try to submit my entry though. This is one of Indonesian traditional steam cup cake which I really love. Whenever I'm going home to Indonesia (Now I live in India) I always make a point to buy this. I guess I will have to try. I got this recipe from my friend's blog at http://spices-corner.blogspot.com/2006/11/steam-cake.html

So, here we go:

Ingredients:

* egg 1 (room temperature)
* any soda (bicarb) 125 ml
* sugar 150 gr
* any purpose flour 250 gr
* food colouring 1 tsp
* cake emulsfier 1 spoon (such as tbm)

Direction:

1. Prepare pot for steamer, and heat it.
2. Beat egg and sugar until frothy
3. Then add soda, flour, cake emulsifier and beat briefly
4. Add food colouring in half part of part mix.
5. Pour the ingredients to muffin mold with pour each different colour one by one
6. Steam for 30 min till cake turning well

ps: do not open the steamer while cooking because cake will not turning well.

Beer Cheese Cupcakes with Bacon Cheddar Cream Cheese frosting.

* 1 cup beer
* 1 stick, plus 1 tb, unsalted butter
* 1 cup grated cheddar (I'd go for the good stuff here. Get something nice and sharp, not the cheap stuff that comes shredded in a bag.)
* 2 cups dark brown sugar
* 3/4 cup sour cream
* 2 eggs
* 1 tb vanilla extract
* 2 cups flour
* 2 1/2 tsp baking soda

Combine the beer and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Add cheddar. Remove from heat, and whisk in the sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into cupcake wrappers and bake for 25 minutes, or until inserted cake tester comes out clean.

Makes 18 cupcakes.

Everyone loves peanut butter and chocolate,so these cupcakes are a favorite among many with a twist!

* 2 cups brown sugar
* 1/2 cup shortening
* 1 cup peanut butter
* 2 eggs
* 1 1/2 cups milk
* 1 teaspoon vanilla extract
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 2 teaspoons cream of tartar
* 1 pinch salt
* Raw Cookie Dough
* Chocolate candy melts
Directions

1. Preheat the oven to 350 degrees F (175 degrees C). Line a cupcake pan with paper liners, or grease and flour cups.
2. In a large bowl, mix together the brown sugar, shortening and peanut butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cream of tartar, baking soda and salt; stir into the batter alternately with the milk. Spoon into the prepared muffin cups.Take the cookie dough and add 1 tsp to each cupcake
3. Bake for 15 to 20 minutes in the preheated oven, until the top of the cupcakes spring back when lightly pressed. Cool in the pan for at least 10 minutes before removing to a wire rack to cool completely.Then melt 3/4 cup chocolate will 1 tsp of shortening for 1 minute.Then dip each cupcake top and let harden.and ENJOY :)
